Attach wine transfer hose to wine outlet and gas hose to gas
inlet. The wand is placed in the barrel, then the bung is expanded securing the brass adjuster in place. Gas is introduced
pressurizing the vessel. The brass adjuster is then locked in place above the lees.
To prevent disturbing the lees,
wine enters through side openings at the bottom of the wand. The clear settled wine is monitored through the sightglass located
at the wine outlet (where your wine transfer hose is attached). The wine is cleanly transferred leaving the lees behind.
To protect the barrel from oxygen temporally until it is cleaned, the bung may be placed back in the emptied barrel to retain
the residual gas.
Recommended gas pressure is 15 psi, expect 20 gpm. The flow rate will vary with the length and
height of the run. A small (224 cubic foot) cylinder of gas will push 20 to 25 barrels.
